Roasted veggies

Just want to be under your blanket while finishing your chips packet due to bad weather. Yeah, I know this is a comfy solution but with a high risk  of imbalance your body and impact badly your mood. To cheer up and have your belly happy, I let you an easy to do recipe and with delicious taste.

INGREDIENTS for 1 person

  • 2 to 3 heads of cabbage romanesco or if you can not find use 1 broccoli
  • 1/2 lawyer
  • 1 or 2 sweet potatoes
  • Some dried tomatoes
  • Olive oil
  • Salt
  • Pepper


  1. Set aside the plate of your oven
  2. Preheat oven to 200 ° C
  3. Peel sweet potatoes and cut into large cubes
  4. Roughly cut the heads of the romanesco cabbage
  5. Take the oven tray and place cooking paper
  6. Place the cabbage and sweet potatoes on the plate
  7. Salt and pepper
  8. Drizzle with olive oil (the equivalent of 2 large tablespoons)
  9. Mix vegetables
  10. Bake for 20 – 30 minutes
  11. During cooking, cut the 1/2 avocado into strips
  12. Cut the dried tomatoes into small cubes
  13. Remove the roasted vegetables and put them in a bowl or plate
  14. Sprinkle with dried tomatoes and decorate with avocado
