Weather was cooler here in my little city, a nasty flu ruined a part of my week. In order to feel better I cooked a soup with pumpkin and coco milk. So delicious…
You need a pumpkin, 4 or 5 carrots, a red onion and 2 cloves garlic. To avoid waste I added butternut flesh left over from my previous recipe.
You will also need 2 table spoon coconut oil, a pinch of salt, 1 tablespoon of white pepper and 100ml of coconut milk.
Cut in pieces pumpkin, carrots, red onion and garlic.
In a pan with high height, put 2 table spoon coconut oil. As hot, add onion and garlic and let’s cook around 5 minutes
Then, you add pumpkin and carrot. After 10 minutes, you can pour around 0,5 liter of water in the pan and let’s sim 30 minutes. After 30 minutes, add the coconut milk and you grind the soup in a robot to get the texture you like.
Pour the soup into a bowl. I decorate it with a splash of coco milk and a spinach leave. Et voilà!!!
